The variety of this wine is 100% Syrah , with a production of 70 quintals per hectare. It is located in the town of Pepita , at an altitude of 520 meters above sea level. The harvest period is between 5 and 10 September . Maceration lasts 18 days on the skins, followed by a 2-month refinement in the bottle. The alcohol content is 14% vol. The wine has a ruby red color and a smell of red berry fruit with spicy notes. On the palate, the flavor is soft, with light and balanced tannins. As for food pairings , it is recommended to serve it with pork fillet with cocoa, buttered potatoes, apple sauce and gorgonzola foam. The optimal serving temperature is around 8-10 ° .
